- 1 Tbsp. sugar
- 1/2 tsp. salt
- 2 Tbsp. margarine
- 1 Tbsp. lemon juice
- 1/4 tsp. grated lemon peel

1Combine carrots, water, sugar and salt in heavy pan.

2Cover and cook over medium-high heat until water has evaporated, about 20 minutes.

3Add margarine, lemon juice and lemon peel; stir until margarine is melted.
