  • 2 large eggs
  • 1 c. lemon flavored low-fat yogurt
  • 1 c. low-fat cottage cheese
  • 1 tsp. vanilla
  • 1/4 c. all-purpose flour
  • 1/4 tsp. salt
  • 2 Tbsp. honey
  • 2 ripe lemons, sliced

    Preheat oven to 350°.

    Spray 9-inch pie plate with nonstick spray.

    Put eggs, yogurt and cottage cheese in blender.

    Blend on high (few seconds to mix well).

    With blender running on low, add flour, salt and honey slowly.

    Add lemon slices (few at a time); blend until smooth.

    Bake until knife inserted in center comes out clean, 25 to 30 minutes.

    Remove from oven and cool.
