- 2 large eggs
- 1 c. lemon flavored low-fat yogurt
- 1 c. low-fat cottage cheese
- 1 tsp. vanilla
- 1/4 c. all-purpose flour
- 1/4 tsp. salt
- 2 Tbsp. honey
- 2 ripe lemons, sliced
Directions

1Preheat oven to 350°.

2Spray 9-inch pie plate with nonstick spray.

3Put eggs, yogurt and cottage cheese in blender.

4Blend on high (few seconds to mix well).

5With blender running on low, add flour, salt and honey slowly.

6Add lemon slices (few at a time); blend until smooth.

7Bake until knife inserted in center comes out clean, 25 to 30 minutes.

8Remove from oven and cool.
