  • 1/2 stick margarine
  • 3 large eggs
  • grated rind of 1 large lemon
  • juice of lemon (scant 1/4 c.)
  • 1 1/2 c. sugar
  • 1/4 tsp. salt
  • 1 Tbsp. cornmeal

Directions

    Soften margarine and cream with sugar.

    (Mix this pie by hand.)

    Add eggs, one at a time.

    (Do not beat; stir in.) Add lemon juice, grated rind, salt and cornmeal.

    Mix well and pour into unbaked pie shell.

    Cook for 30 minutes or until set at 350°.
