- 1 (9-inch) pie shell (unbaked)
- 2 c. sugar
- 1 Tbsp. flour
- 1 tsp. cornmeal
- 4 unbeaten eggs or 3 extra large
- 1/4 c. butter, melted
- 1/4 c. evaporated milk
- grated rind of 1 lemon
- 1/4 c. lemon juice
Directions

1In large bowl, toss sugar, flour and cornmeal lightly with a fork.

2Add remaining ingredients and mix.

3Beat with rotary or electric mixer until smooth and thoroughly blended.

4(Mixture may be a bit lumpy.)

5Pour into unbaked pie shell.

6Bake at 375° for 35 to 45 minutes until knife inserted comes out clean.

7Cool.
