Ingredients

  • 1 (9-inch) pie shell (unbaked)
  • 2 c. sugar
  • 1 Tbsp. flour
  • 1 tsp. cornmeal
  • 4 unbeaten eggs or 3 extra large
  • 1/4 c. butter, melted
  • 1/4 c. evaporated milk
  • grated rind of 1 lemon
  • 1/4 c. lemon juice

Directions

    In large bowl, toss sugar, flour and cornmeal lightly with a fork.

    Add remaining ingredients and mix.

    Beat with rotary or electric mixer until smooth and thoroughly blended.

    (Mixture may be a bit lumpy.)

    Pour into unbaked pie shell.

    Bake at 375° for 35 to 45 minutes until knife inserted comes out clean.

    Cool.
