- 5 eggs, separated
- 1 1/2 c. sugar
- 3/4 stick margarine
- 1 1/2 Tbsp. corn meal
- juice of 2 lemons
- 1 1/2 tsp. lemon rind
Directions

1Separate eggs and beat yolks slightly.

2Cream margarine and sugar together until crumbly.

3Add beaten egg yolks.

4Add lemon juice, rind and corn meal.

5Beat egg whites until firm but not stiff.

6Fold whites into other ingredients.

7Pour into deep dish unbaked pie crust and bake at 350° until firm but not stiff.
