  • 2 c. sugar
  • 1 Tbsp. flour
  • 1 Tbsp. cornmeal
  • 4 eggs
  • 1/4 c. milk
  • 1/4 c. lemon juice
  • 1/4 c. softened margarine
  • 2 Tbsp. grated lemon rind
  • 1 (9 1/2 or 10-inch) unbaked pie crust

Directions

    Mix lightly together the sugar, flour and cornmeal.

    Add remaining ingredients and mix thoroughly.

    Pour into pie crust. Bake at 375° for 35 to 40 minutes or until golden brown.
