  • 1 whole Shallot, Quartered
  • 2 cups Baby Spinach
  • 1 pound Ground Chicken, Turkey, Or Beef
  • 1/4 cups Grated Parmesan Cheese
  • 1 whole Large Egg
  • 1/2 teaspoons Smoked Paprika
  • 1/2 teaspoons Salt
  • 1/2 teaspoons Coarsley Ground Black Pepper
  • 6 Tablespoons BBQ Sauce (or Ketchup)

    Preheat oven to 450.

    Spray 6 cup muffin tin with Pam.

    Crumble bread in food processor.

    Feed shallot through food processor, then baby spinach.

    Add bread crumbs back in, along with chicken, cheese, egg, salt, and pepper.
