  • 2 c. sugar
  • 1 Tbsp. flour
  • 1 Tbsp. cornmeal
  • 4 eggs
  • 1/4 c. melted butter
  • 1/4 c. milk
  • 2 to 4 Tbsp. grated lemon rind
  • 1/2 c. lemon juice

Directions

    Combine sugar, flour and meal in a large bowl.

    Toss lightly with a fork.

    Add remaining ingredients; beat with rotary or electric mixer until smooth and thoroughly blended.

    Pour into unbaked 9-inch pie shell and bake for 35 to 40 minutes at 350° or until top is golden brown.
