- 1 Tbsp. cornmeal
- 4 eggs
- 1/4 c. melted butter
- 1/4 c. milk
- 2 to 4 Tbsp. grated lemon rind
- 1/2 c. lemon juice
Directions

1Combine sugar, flour and meal in a large bowl.

2Toss lightly with a fork.

3Add remaining ingredients; beat with rotary or electric mixer until smooth and thoroughly blended.

4Pour into unbaked 9-inch pie shell and bake for 35 to 40 minutes at 350° or until top is golden brown.
