Lemon Chicken

  • 2 to 3 lb. chicken, quartered
  • pepper to taste
  • 1 (6 oz.) frozen lemonade concentrate, thawed
  • 6 c. cornflakes, crushed
  • 1/2 c. butter

Directions

    Season chicken with pepper and place in bowl with lemonade, stirring to coat.

    Let stand at room temperature for 1 hour. Drain. Roll in cornflake crumbs, coating completely.

    Place in melted butter in baking dish. Bake at 350° for 1 hour or until brown and tender.
