Lemon Chicken

  • 1 lb. skinned, boned chicken breasts, cut into strips
  • 1 medium onion, chopped
  • 2 garlic cloves, crushed
  • 2 Tbsp. margarine
  • 1 Tbsp. cornstarch
  • 1 large carrot, diced thinly
  • 2 Tbsp. fresh lemon juice
  • 1/2 tsp. salt
  • 1 c. frozen peas
  • 1 1/2 c. dry instant rice
  • 1 regular can chicken broth

Directions

    Saute chicken, onion and garlic in margarine until chicken is lightly browned, about 5 minutes.

    Stir in cornstarch; cook 1 minute longer.

    Add broth, carrot, lemon juice, peas and salt; boil 5 minutes.

    Stir in rice.

    Cover and remove from heat.

    Let stand 5 minutes.

    Fluff with fork.

    Serve with lemon wedges. Serves 4.
