- 1 lb. skinned, boned chicken breasts, cut into strips
- 1 medium onion, chopped
- 2 garlic cloves, crushed
- 2 Tbsp. margarine
- 1 Tbsp. cornstarch
- 1 large carrot, diced thinly
- 2 Tbsp. fresh lemon juice
- 1/2 tsp. salt
- 1 c. frozen peas
- 1 1/2 c. dry instant rice
- 1 regular can chicken broth
Directions

1Saute chicken, onion and garlic in margarine until chicken is lightly browned, about 5 minutes.

2Stir in cornstarch; cook 1 minute longer.

3Add broth, carrot, lemon juice, peas and salt; boil 5 minutes.

4Stir in rice.

5Cover and remove from heat.

6Let stand 5 minutes.

7Fluff with fork.

8Serve with lemon wedges. Serves 4.
