- 1 (3 lb.) whole roasting chicken
- 1 large lemon
- lemon pepper
Directions

1Preheat oven to 375°. With a double-tined cooking fork, pierce lemon almost through all over, 20 to 30 times.

2Set aside any juice that leaks out.

3Rinse chicken; remove and discard fat. Place lemon and any juice in cavity of chicken; truss with string or metal skewers.

4Season with lemon pepper.

5Place chicken in small roasting pan; roast 70 minutes.

6Remove from oven; let stand covered 10 to 15 minutes.

7Makes 4 servings.
