- 4 skinned, boned chicken breasts
- 1 chopped onion
- 2 crushed garlic cloves
- 1 Tbsp. butter
- 1 Tbsp. cornstarch
- 1 (13 3/4 oz.) chicken broth
- chopped parsley
- 1 large sliced carrot
- 2 Tbsp. lemon juice
- 1/2 tsp. grated lemon rind
- 1/2 tsp. salt
- 1 c. snow pea pods
- 1 1/2 c. dry Minute rice
Directions

1Combine chicken breasts, onion, garlic and butter in 2 1/2 quart microwave-safe dish.

2Cover and cook on High 3 to 4 minutes, stirring once.

3Blend cornstarch with broth and add with remaining ingredients to chicken mixture.

4Cover and cook 7 minutes or until thickened.

5Stir twice.

6Fluff with fork.
