Lemon Chicken Breasts

  • 2 (8 oz.) chicken breasts, lightly salted
  • 2 oz. sliced mushrooms (fresh)
  • 12 stuffed green olives. sliced
  • 3 oz. white wine
  • 1 oz. lemon juice
  • 2 oz. grated Parmesan
  • 2 sticks butter or margarine

Directions

    Remove skin from chicken breasts.

    Melt butter in heavy skillet and saute chicken until almost done.
  3. 3
    Add mushrooms and olives and simmer over low heat 2 to 3 minutes.

    Add wine and lemon juice, simmer 2 minutes more.

    Remove to serving dish and sprinkle Parmesan and garnish with fresh parsley.
