- 2 (8 oz.) chicken breasts, lightly salted
- 2 oz. sliced mushrooms (fresh)
- 12 stuffed green olives. sliced
- 3 oz. white wine
- 1 oz. lemon juice
- 2 oz. grated Parmesan
- 2 sticks butter or margarine
Directions

1Remove skin from chicken breasts.

2Melt butter in heavy skillet and saute chicken until almost done.

3Add mushrooms and olives and simmer over low heat 2 to 3 minutes.

4Add wine and lemon juice, simmer 2 minutes more.

5Remove to serving dish and sprinkle Parmesan and garnish with fresh parsley.
