  • 3 Tbsp. water
  • 1 tsp. grated lemon rind
  • 6 Tbsp. sugar
  • 1/4 c. lemon juice
  • 1/4 tsp. salt
  • 3 egg whites
  • 1/4 tsp. cream of tartar
  • 6 Tbsp. sugar

    Beat egg whites together with cream of tartar.

    When stiff, add sugar and beat.

    Fold into cooked mixture and fill baked pie shell.

    Brown in 450° oven.
