- 3 lb. rump or sirloin tip roast
- salt
- pepper
- 2 c. white vinegar
- 2 c. water
- 1 large onion, sliced
- 2 bay leaves
- 1 tsp. peppercorns
- 1/4 c. sugar
- flour
Directions

1Rub surface of meat with salt and pepper and place in large bowl.

2Heat vinegar, water, onion, bay leaves, peppercorns and sugar together until very hot, but not boiling.

3Pour hot mixture over meat.

4Cover bowl and let stand in refrigerator for approximately 3 days, turning each day.
