  • 1 (9-inch) pastry shell (unbaked)
  • 3 eggs
  • 1 c. sugar
  • 1/2 c. melted butter
  • 2 Tbsp. lemon juice
  • 1 tsp. vanilla
  • 1 1/3 c. flaked coconut

    Beat eggs.

    Add sugar, butter, lemon juice and vanilla; mix well.

    Stir in coconut.

    Pour into pastry shell.

    Bake in a 350° preheated oven for 40 minutes, or until knife inserted in center comes out clean.
