- 1 (9-inch) pastry shell (unbaked)
- 3 eggs
- 1 c. sugar
- 1/2 c. melted butter
- 2 Tbsp. lemon juice
- 1 tsp. vanilla
- 1 1/3 c. flaked coconut
Directions

1Beat eggs.

2Add sugar, butter, lemon juice and vanilla; mix well.

3Stir in coconut.

4Pour into pastry shell.

5Bake in a 350° preheated oven for 40 minutes, or until knife inserted in center comes out clean.
