- 2 Tbsp. butter
- 2 Tbsp. flour
- 2 eggs yolks
- 1 c. milk
- juice of 1 lemon
- grated rind of 1 lemon
- 2 egg whites, stiffly beaten
Directions

1Cream sugar and butter; add flour and egg yolks.

2Beat smooth. Add milk, lemon juice and rind.

3Fold in stiffly-beaten egg whites and pour into partially baked crust.

4Put in hot oven (425°) and bake until filling is firm to the touch.
