  • 1 c. sugar
  • 2 Tbsp. butter
  • 2 Tbsp. flour
  • 2 eggs yolks
  • 1 c. milk
  • juice of 1 lemon
  • grated rind of 1 lemon
  • 2 egg whites, stiffly beaten

Directions

    Cream sugar and butter; add flour and egg yolks.

    Beat smooth. Add milk, lemon juice and rind.

    Fold in stiffly-beaten egg whites and pour into partially baked crust.

    Put in hot oven (425°) and bake until filling is firm to the touch.
