- 1 cup butter, softened
- 2 cups sugar, plus
- extra sugar, to roll cookies in
- 2 large eggs
- 34 teaspoon lemon extract
- 3 cups flour
- 12 teaspoon baking soda
- 12 teaspoon cream of tartar
Directions

1Preheat oven to 375F/190C.

2Cream butter, sugar, eggs and lemon extract.

3Sift together flour, baking soda and cream of tartar and stir into butter mix.

4Cover and chill for 1 hour.

5Shape into 1 inch balls and roll in sugar.

6Bake on a cookie sheet for about 9-11 minutes depending on your oven (cookies should be light brown around the edge).

7Let rest about 10 minutes before moving.

8Try one and adjust temperature or time if needed.
