  • 7/8 cup sunflower oil
  • 1 cup sugar
  • salt
  • 2 eggs
  • 4 3/8 ounces lemon yogurt
  • 1 lemon
  • 2 cups flour
  • 1 tablespoon yeast
  • 2 1/2 cups superfine sugar
  • 4 tablespoons lemon juice

Directions

    Preheat the oven to 160 degrees Celsius.

    In a bowl, mix the sunflower oil and sugar. Slowly add a pinch of salt, the eggs and yogurt. Beat for 5 minutes, and then add the lime zest and lime juice. Beat again.

    Pour the batter into a cupcake pan and bake for 20 to 25 minutes.

    Remove from the oven and let the cupcakes cool.

    In a bowl, add the superfine sugar and lemon juice and mix well.

    Pour onto the cupcakes and serve.
