- 7/8 cup sunflower oil
- 1 cup sugar
- salt
- 2 eggs
- 4 3/8 ounces lemon yogurt
- 1 lemon
- 2 cups flour
- 1 tablespoon yeast
- 2 1/2 cups superfine sugar
- 4 tablespoons lemon juice
Directions

1Preheat the oven to 160 degrees Celsius.

2In a bowl, mix the sunflower oil and sugar. Slowly add a pinch of salt, the eggs and yogurt. Beat for 5 minutes, and then add the lime zest and lime juice. Beat again.

3Pour the batter into a cupcake pan and bake for 20 to 25 minutes.

4Remove from the oven and let the cupcakes cool.

5In a bowl, add the superfine sugar and lemon juice and mix well.

6Pour onto the cupcakes and serve.
