  • 1 c. sugar
  • 4 Tbsp. flour
  • 1/8 tsp. salt
  • 2 Tbsp. melted butter
  • 5 Tbsp. lemon juice
  • grated rind of 1 lemon
  • 3 well beaten egg yolks
  • 1 1/2 c. milk
  • 3 stiffly beaten egg whites

Directions

    Blend sugar, flour and salt. Add to melted butter. Add lemon juice and lemon rind. Mix well. Add egg yolks and milk; stir well. Fold in egg whites. Pour into buttered custard cups. Place in pan of hot water. Bake at 350° for 30 to 45 minutes until lightly brown on top. Remove from pan. Cool and refrigerate.
