- 1/2 c. butter
- 2 tsp. grated lemon rind
- 1/2 c. lemon juice
- 1 1/2 c. sugar
- 3 whole eggs
- 3 egg yolks
Directions

1In the top of double boiler, melt the butter.

2Stir in the lemon rind, juice and sugar.

3Beat the eggs and yolks together until thick.

4Blend into lemon mixture.

5Cook, stirring constantly, over hot water until mixture is very thick.

6Chill before using.

7For those who dislike lemon pies rigid with cornstarch.

8Makes enough for 9-inch pan.

9Can be used as a cake filling or in place of jam.
