- 3 eggs
- 1 cup sugar
- 1/2 cup lemon juice (about 2 lemons)
- 1/4 cup butter or margarine, melted
- 1 Tbsp. grated lemon peel
Directions

1In heavy saucepan beat eggs and sugar.

2Stir in lemon juice, butter and lemon peel.

3Cook and stir over medium-low heat for 15 minutes or until mixture is thickened (160 degrees). Cover and store in refrigerator.

4Yield 1 2/3 cups.

5Spread on hot buttered biscuits or toast.
