- 1 cup sugar
- 1 teaspoon butter
- 1 tablespoon flour (heaping)
- 1 1/4 cups milk
- 1 lemon (juice and rind)
- 2 egg yolks
- 2 egg whites
- 1 pinch salt
Directions

1Set oven to 300F and prepare water bath.

2Beat butter and sugar.

3Add flour, milk, lemon juice & rind, and yolks. Beat.

4In a separate bowl, whisk whites until stiff peaks form.

5LIGHTLY fold whites into lemon mixture.

6Bake in water bath for 30 minutes at 300°F.

7Refrigerate for 2 hours or overnight.

8(When doubling, use only 2 cups milk).
