- 1 Tbsp. (1 envelope) unflavored gelatin
- 1/4 c. cold water
- 6 beaten egg yolks
- 3/4 c. sugar
- 1 1/2 tsp. lemon rind (3 lemons)
- 3/4 c. lemon juice (3 lemons)
- 3/4 c. sugar
- 6 stiffly beaten egg whites
- 1 small angel food cake
Directions

1Soften gelatin in cold water.

2Combine egg yolks, 3/4 cup sugar, lemon juice and rind.

3Cook over hot (not boiling) water, stirring constantly until mixture coats metal spoon.

4Add softened gelatin and stir to dissolve.

5Cool until partially set.

6Beat 3/4 cup sugar into egg whites.

7Fold into custard.
