  • 1/2 c. butter, melted
  • 40 soda crackers, crushed
  • 4 egg whites
  • 1 c. sugar
  • pinch of salt
  • 1/4 tsp. cream of tartar
  • 1 can lemon pie filling
  • Cool Whip

Directions

    Mix together melted butter and soda crackers. Press into the bottom of a 9 x 13 pan. Beat egg whites until foamy, then gradually add sugar, salt and cream of tartar as in making a meringue. Spread on top of crackers. Bake 20 minutes at 350°. Cool. Spread lemon pie filling over meringue. If not enough, you may add more filling. Top with Cool Whip. Refrigerate until served. Serves 12 to 16.
