  • 1 lb. butter
  • 2 1/2 c. sugar
  • 4 c. cake flour
  • 1/2 lb. cherries
  • 1/4 lb. candied pineapple
  • 1 lb. pecans (4 c.)
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 6 eggs
  • 3 oz. lemon extract

    Cream butter and sugar.

    Add eggs, beating them well.

    Add lemon extract.

    Add sifted dry ingredients and cream mixture.

    Add fruits and nuts (flour lightly), using about 1/3 cup cake flour. Bake in loaf pan at 300° for 1 1/2 to 2 hours or bake in tube pan 2 1/2 hours.
