  • 3/4 c. sugar
  • 2 Tbsp. cornstarch
  • 1/8 tsp. salt
  • 1/2 c. water
  • 1 egg, beaten
  • 1 Tbsp. grated lemon rind
  • 1 Tbsp. butter
  • 1/4 c. lemon juice

Directions

    Mix first 4 ingredients together; bring to boiling.

    Stir constantly.

    Boil 2 minutes.

    Stir some mixture into egg; return egg to hot mixture.

    Cook 3 minutes.

    Stir in rind, butter and juice.

    Cool.

    Fills 2 layers.
