Lemon Fish And Rice Almondine

- 1 lb. frozen fish fillets, thawed
- 2 1/4 c. water
- 1/4 c. lemon juice
- 1 c. converted rice
- 1 tsp. salt
- 1/8 tsp. nutmeg
- 4 green onions with tops, sliced
- salt and pepper to taste
- paprika
- 1/4 c. butter or margarine, melted
- 1 lemon, thinly sliced
- 1/4 c. toasted sliced almonds
Directions

1Bring water and lemon juice to a boil in saucepan; stir in rice, salt and nutmeg.

2Cover tightly and simmer 20 minutes. Remove from heat.

3Let stand, covered, until all liquid is absorbed, about 5 minutes.

4Stir green onions into rice.

5Spoon rice into a 12 x 8-inch baking dish.
