Lemon Fish Roll-Ups

  • 1/3 c. oleo
  • 3 Tbsp. lemon juice
  • 2 tsp. chicken bouillon or 2 cubes
  • 1 c. cooked rice
  • 1 c. shredded cheese
  • 8 fish fillets (like flounder or a thinner fish you can roll)
  • paprika
  • 1 (10 oz.) pkg. chopped broccoli, thawed

Directions

    Melt oleo, lemon juice and bouillon.

    Heat slowly until bouillon dissolves.

    In a medium bowl mix rice, broccoli, cheese and 1/4 cup lemon oleo sauce.

    Divide among fillets.

    Roll up and place seam side down in a baking dish.

    Pour remaining sauce over roll-ups.

    Bake 25 to 30 minutes.

    Garnish with paprika.
