Lemon Fish Roll-Ups

- 1/3 c. oleo
- 3 Tbsp. lemon juice
- 2 tsp. chicken bouillon or 2 cubes
- 1 c. cooked rice
- 1 c. shredded cheese
- 8 fish fillets (like flounder or a thinner fish you can roll)
- paprika
- 1 (10 oz.) pkg. chopped broccoli, thawed
Directions

1Melt oleo, lemon juice and bouillon.

2Heat slowly until bouillon dissolves.

3In a medium bowl mix rice, broccoli, cheese and 1/4 cup lemon oleo sauce.

4Divide among fillets.

5Roll up and place seam side down in a baking dish.

6Pour remaining sauce over roll-ups.

7Bake 25 to 30 minutes.

8Garnish with paprika.
