Lemon Flounder Bake

- 2 Tbsp. butter or margarine
- 1/2 c. chopped celery
- 1/4 c. green pepper strips
- 1/4 c. chopped onion
- 1 (10 3/4 oz.) can condensed tomato soup
- 2 Tbsp. lemon juice
- 1 lb. flounder or haddock fillets
Directions

1Melt butter in 2-quart saucepan over medium heat.

2Cook celery, green pepper strips and onion until tender.

3Stir in tomato soup and lemon juice.

4Spoon 1/2 cup sauce in shallow 2-quart baking dish.

5Arrange fish fillets in single layer over sauce; cover with remaining sauce.

6Bake in 350° oven for 20 to 25 minutes, or until sauce is bubbling and fish flakes easily with a fork.

7Garnish with celery slices, if desired.

8Serves 4.
