Lemon-Fried Chicken

- 1/4 c. lemon juice
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 3 1/2 lb. fryer
- 1/4 c. vegetable oil
- 1/4 tsp. powdered thyme
- 1/4 c. oil (for frying)
- 1/2 c. flour
Directions

1Cut fryer in quarters.

2Combine lemon juice, oil and seasoning to make marinade.

3Pour over chicken. Be sure all chicken parts are in contact with marinade.

4Marinate for 1 hour in refrigerator. Drain chicken. Dust with flour. Heat oil in heavy skillet.

5Place chicken in hot oil and fry until golden brown on all sides.

6Bake in a 350° oven about 30 minutes or until tender. Makes 4 servings.
