Lemon Fruit Cake

- 1 lb. butter
- 1 lb. brown sugar
- 6 eggs
- 4 c. all-purpose flour
- 1 tsp. baking powder
- 1/4 tsp. salt
- 1 1/2 oz. lemon extract
- 1/2 lb. candied cherries
- 1 lb. candied pineapple
- 1 lb. unchopped pecans
Directions

1Cream butter and sugar together.

2Add egg yolks one at a time. Beat well each time.

3Alternate lemon extract, 2 cups flour and baking powder. Dredge cut up fruit and nuts with the remaining 2 cups of flour.

4Add to mixture.

5Fold in stiffly beaten egg whites. Let stand overnight.

6Bake in tube pan lined with greased and floured wax paper.

7Bake 2 1/2 hours at 250°.
