Lemon Fruit Cake

  • 2 c. sugar
  • 1 lb. softened margarine
  • 6 eggs
  • 4 c. flour
  • 1/2 to 1 lb. nuts (pecans taste good)
  • 1/2 lb. candied cherries
  • 1/2 lb. candied pineapple
  • 1 1/2 oz. lemon flavoring

Directions

    Mix sugar, butter and flavoring.

    Add flour, a little at a time, alternating with the eggs.

    Begin and end with the flour. Add nuts, cherries and pineapple.

    Bake in greased spring-form pan at 375° for 30 minutes.

    Turn temperature down to 300° for 1 hour, then turn temperature to 275° for 15 minutes.

    Let cool a few minutes, then turn out of pan carefully.
