Lemon Fruit Cake

- 2 c. butter
- 2 1/4 c. sugar
- 6 eggs
- 4 c. flour
- 1/2 tsp. salt
- 1 1/2 tsp. baking powder
- 1 (3 oz.) bottle lemon
- 2 c. canned pineapple
- 2 c. cherries, drained
- 4 c. pecans, chopped
Directions

1Cream butter and sugar until light and fluffy.

2Add eggs, one at a time, beating well after each addition.

3Sift flour, salt and baking powder.

4Blend into butter mixture.

5Add lemon extract. Fold fruit and nuts into batter until thoroughly mixed.

6Spoon mixture into greased 10-inch tube pan.

7Bake at 275° for 2 hours. Cool cake thoroughly before removing from pan.
