Lemon Grape-Nuts Pudding

- 2 Tbsp. butter or margarine
- 1 c. sugar
- 2 eggs, separated
- 1 Tbsp. flour
- 1/3 c. Grape-Nuts
- 1/2 tsp. salt
- 1/4 c. lemon juice and grated rind of 1 lemon
- 1 c. milk
Directions

1Cream the butter and gradually add the sugar.

2Add the egg yolks and beat until light and fluffy.

3Combine the flour, Grape-Nuts and salt and stir into the creamed mixture.

4Add the milk, lemon juice and rind.

5Beat egg whites until stiff and fold into mixture.

6Bake in buttered casserole or dish or custard cups. Set in a pan of hot water.

7Bake in 350° oven for about 30 minutes or until set.

8Chill.
