Lemon Herb Lamb Chops

- 1/4 cup olive oil
- 1 tablespoon lemon juice
- 1 garlic clove, minced
- 1 teaspoon grated lemon zest
- 1/4 teaspoon salt
- 1/4 teaspoon dried basil
- 1/4 teaspoon dried rosemary, crushed
- 1/4 teaspoon pepper
- 2 lamb loin chops (1 inch thick and 6 ounces each)
Directions

1In a shallow dish, combine the first eight ingredients; add the chops and turn to coat. Cover; refrigerate for at least 2 hours or overnight.

2Drain and discard marinade. Broil lamb 3-4 in. from the heat for 4-9 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°).
