Lemon Herbed Rice

- 1 cup rice
- 1 teaspoon lemon zest
- 12 teaspoon salt
- 2 tablespoons chopped parsley
- 1 tablespoon minced fresh chives
Directions

1In a medium saucepan, bring 2 1/3 cups water to a boil.

2Stir in rice, lemon zest and salt.

3Cover, reduce heat to low, and cook for 18 minutes or until rice is tender.

4Let stand, covered for 5 minutes.

5Fluff with a fork.

6Add herbs and toss lightly to mix.
