Lemon Marinated Chicken

Ingredients
- 4 chicken breasts (boneless, skinless)
- 1 Tbsp. fresh rosemary, chopped or 1 tsp. dried rosemary
- 1/8 tsp. pepper
- 2 Tbsp. lemon juice
- 1 Tbsp. white wine or water
- 1 Tbsp. oil
- 2 tsp. honey
- 1 tsp. soy sauce
- 1/2 tsp. Dijon mustard
- 1/2 tsp. lemon peel
Directions

1In a shallow dish, combine all ingredients except chicken; mix well.

2Add chicken; turn to coat.

3Cover and marinate in refrigerator 20 to 30 minutes, the longer, the better.

4Oil broiler pan and place chicken on prepared pan; broil 4 to 6 inches from broiler.

5Cook 8 to 10 minutes on one side, basting with marinade.

6Turn and continue cooking and basting 8 to 10 minutes longer or until chicken is fork-tender and juices run clear.

7Can also be charcoal grilled.

8Use same method as for broiling. Serves 4.
