- 1 1/4 c. sugar
- 4 Tbsp. cornstarch
- 1 1/8 c. hot water
- 2 1/4 Tbsp. butter
- 3 Tbsp. lemon juice
Directions

1Mix sugar and cornstarch in saucepan.

2Stir hot water in gradually.

3Cook over moderate heat, stirring constantly, until mixture thickens and boils.

4Boil 1 minute.

5Slowly stir half the hot mixture in saucepan.

6Boil 1 minute longer, stirring constantly.

7Remove from heat.

8Continue stirring until smooth. Blend in butter and lemon juice.

9Pour into baked pie shell; cover with meringue.

10Bake at 400° until delicately brown.
