- 1 c. sugar
- 5 Tbsp. cornstarch
- 1/4 tsp. salt
- 2 c. boiling water
- 3 eggs, separated
- juice from 1 1/2 lemons
- grated rind from 1/2 lemon
- 1 Tbsp. butter
- 1/4 c. sugar
- 1/2 tsp. cream of tartar
Directions

1Mix 1 cup sugar, cornstarch and salt.

2Add water.

3Cook in double boiler or microwave until thick.

4Add egg yolks and cook until real thick.

5Add lemon juice and rind; stir.

6Remove from heat; add butter.

7Put in baked pie shell.

8Beat egg whites with 1/4 cup sugar and cream of tartar until stiff.

9Put on filling and brown in oven.
