Valentine'S Day Beet Waffles

  • 1 1/3 cups whole milk
  • 1 cup finely chopped cooked beets
  • 2 drops red food coloring gel (optional)
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon table salt
  • 2 cups fresh blueberries
  • 1/4 cup chopped fresh mint leaves
  • 1/2 cup whipped cream
  • Pure maple syrup

    Preheat oven to 200°F. Combine milk, beets, and, if desired, food coloring in a blender, and

    blend until smooth. While blender is running, add eggs, oil, and vanilla; blend until well

    Stir together flour, sugar, baking powder, and salt in large bowl. Add beet mixture, and stir

    until just combined.

    Preheat a Belgian-style waffle iron, and lightly coat with cooking spray. Pour about 1/2 cup

    batter for each waffle; cook according to manufacturer's instructions until waffles are golden

    brown and crisp. Place in a single layer on a baking sheet, and cover. Keep warm in preheated

    oven up to 30 minutes.

    Top waffles with blueberries, and sprinkle with mint. Serve with whipped cream and syrup.
