- 3 Tbsp. cream cornstarch
- 1 Tbsp. grated lemon rind
- 3 eggs, separated
- 1 baked pie shell
- 1 1/4 c. sugar
- 1/4 c. lemon juice
- 1 1/2 c. boiling water
Directions

1Combine

2cornstarch, sugar, lemon juice and lemon rind. Beat egg

3yolks and add to cornstarch mixture. Gradually add boiling water.

4Heat to boiling over direct heat and then boil gently

54 minutes,

6stirring constantly.

7Pour into baked pie shell. Beat egg

8whites until stiff, but not dry.

9Gradually beat in 6 tablespoons sugar. Spread meringue over top of pie. Bake 4 to 5 minutes in 425° oven until browned.
