Lemon Meringue Pie

- 1 (9-inch) pastry shell, baked
- 1 1/4 c. sugar
- 1/8 tsp. salt
- 6 tsp. cornstarch
- 2 c. boiling water
- grated rind of 1 lemon
- 4 tsp. margarine
- 3 egg yolks
- 1/2 c. lemon juice
Directions

1In a saucepan, mix sugar, salt and cornstarch together.

2Add water and grated rind.

3Cook over medium heat until mixture begins to thicken, stirring frequently.

4Reduce heat and simmer 10 minutes.

5Stir hot mixture into egg yolks which have been mixed with lemon juice.

6Strain into baked pie shell.

7Bake at 400° for 10 minutes.

8Top with meringue.
