- 1 baked pastry shell
- 1 2/3 c. sugar
- 6 Tbsp. cornstarch
- 1/2 c. lemon juice
- 4 eggs, separated
- 1/2 c. boiling water
- 2 Tbsp. butter
- 1/4 tsp. cream of tartar
Directions

1Preheat oven to 350°.

2In heavy saucepan, combine 1 1/3 cups sugar and cornstarch; add lemon juice.

3In small bowl, beat egg yolks.

4Add to lemon mixture.

5Gradually add water, stirring constantly.

6Over medium heat, cook and stir until mixture boils and thickens, about 8 to 10 minutes.

7Remove from heat.

8Add butter; stir until melted.

9Pour into prepared pastry shell.
