- 1 baked 9-inch pie shell
- 1 c. sugar
- 5 Tbsp. cornstarch
- 1/2 tsp. salt
- 2 c. water
- 3 egg yolks
- 1/3 c. lemon juice
- 2 tsp. grated rind
- 3 Tbsp. butter
Directions

1Cook and stir the first 4 ingredients until thick.

2Pour small amount into yolks.

3Pour yolks into pan; cook about 5 minutes. Add lemon juice, rind and butter; pour into shell.

4Top with meringue.

5Bake for 15 minutes in a 300° oven until brown.
