- 1 lb. frozen peas
- 1/2 lb. pearl onions
- 1 jar diced pimento, drained
- 1 1/2 Tbsp. butter
- 1 1/2 tsp. lemon juice
- 1 1/2 tsp. mint flakes
- grated lemon rind
- 1/2 c. butter or margarine
- 7 slices white bread, torn into coarse pieces
- 3/4 c. sugar
- 2 eggs, slightly beaten
- 3 Tbsp. flour
- 1 (20 oz.) can crushed pineapple, undrained
Directions

1In large skillet, melt butter.

2Add bread and brown over medium heat until toast-like.

3In 2-quart casserole dish, combine sugar, eggs and flour and stir well.

4Stir in undrained pineapple. Put toasted bread on top.

5Press down, but do not stir.

6Bake, uncovered, in preheated oven at 350° for 45 minutes.

7Serve hot. Makes 8 servings.
