Lemon Mint Peas

  • 1 lb. frozen peas
  • 1/2 lb. pearl onions
  • 1 jar diced pimento, drained
  • 1 1/2 Tbsp. butter
  • 1 1/2 tsp. lemon juice
  • 1 1/2 tsp. mint flakes
  • grated lemon rind
  • 1/2 c. butter or margarine
  • 7 slices white bread, torn into coarse pieces
  • 3/4 c. sugar
  • 2 eggs, slightly beaten
  • 3 Tbsp. flour
  • 1 (20 oz.) can crushed pineapple, undrained

    In large skillet, melt butter.

    Add bread and brown over medium heat until toast-like.

    In 2-quart casserole dish, combine sugar, eggs and flour and stir well.

    Stir in undrained pineapple. Put toasted bread on top.

    Press down, but do not stir.

    Bake, uncovered, in preheated oven at 350° for 45 minutes.

    Serve hot. Makes 8 servings.
