- grated rind of 2 lemons
- 5 Tbsp. fresh lemon juice
- 1 whole egg
- 2 eggs, separated
- 1 c. heavy cream
- 1 Tbsp. lemon extract
- 1 c. sugar
- 1 Tbsp. cornstarch
Directions

1Prepare Ahead:

2Combine lemon rind, juice, extract, egg yolks, egg, 1/2 cup sugar and cornstarch in double boiler.

3Cook over hot water; stir constantly until thickened (6 to 8 minutes).

4Remove from heat; put in bowl to cool.

5Mixture must be totally cold before going onto next step.
