Lemon Mousse Pie

- 1 envelope unflavored gelatin
- 1/3 c. lemon juice
- 1/3 c. water
- 1 tsp. grated lemon peel
- 5 to 6 drops yellow food coloring
- 1 (8 oz.) pkg. cream cheese
- 1 c. powdered sugar
- 2 c. whipping cream, whipped
- 1 cooked pie shell
- strawberries
Directions

1In a small saucepan, combine gelatin, lemon juice and water. Let stand 1 minute.

2Stir over medium heat until dissolved.

3Stir in lemon peel and food coloring.

4In a small bowl combine cream cheese and sugar.

5Beat until smooth and fluffy.

6Gradually add the gelatin mixture.

7Blend well.

8Refrigerate about 15 minutes. Fold in the whipping cream.

9Spoon into cooked pie shell. Refrigerate about 1 hour.

10Garnish with strawberries.

11Store in refrigerator until ready to serve.
