- 1 c. butter or shortening
- 1 c. sugar
- 4 eggs, separated
- 1/2 c. lemon juice
- 2 c. flour
- 2 tsp. baking powder
- 1 tsp. salt
- 2 tsp. grated lemon peel
Directions

1Cream butter and sugar until smooth.

2Add well-beaten egg yolks and beat until light.

3Add the lemon juice alternately with the flour which has been sifted with baking powder and salt, mixing thoroughly after each addition (do not overmix).

4Fold in stiffly beaten egg whites and grated lemon peel.

5Fill buttered muffin pans 3/4 full and bake at 375° for about 20 minutes.

6Makes 24.
