- 1 3/4 c. flour
- 1 tsp. baking powder
- 3/4 tsp. baking soda
- 1/4 tsp. salt
- 3/4 c. sugar
- 1 Tbsp. lemon rind
- 1 egg, beaten
- 1/4 c. + 2 Tbsp. butter, melted
- 8 oz. lemon yogurt
- 1 Tbsp. lemon juice
Directions

1Preheat oven to 400°.

2Grease muffin tins.

3Combine first six ingredients in bowl.

4Stir together egg, yogurt, butter and lemon juice.

5Add to dry mix.

6Put in tins; bake 20 minutes.

7Cool 5 minutes.

8Remove from pan and place on wire rack.

9Prick with fork and pour glaze on warm muffins.
